Ingredients:
about 5 cups of bread flour
2 cups warm water
2 tablespoons or packets of yeast
6 tablespoons of oil
2 teaspoons of salt
In a large bowl, soften 2 tablespoons of yeast in one-half cup of warm water.
Using a whisk:
Mix in 6 tablespoons of cooking oil, preferably olive oil.
Mix in 2 teaspoons of salt.
Mix in 2 cups of flour, one-half cup at a time. Be sure to use Bread flour. You can
substitute the white flour with up to 2 cups of whole wheat flour.
Mix in the remaining 1 and 1/2 cups of warm water
Using a wooden spoon mix in 2 to 3 more cups of flour. When the dough no longer sticks to
the bowl remove and knead on a well-floured surface for 5 to 10 minutes.
Place the kneaded dough in a large, oiled bowl and cover with a damp cloth. Let rise for 1
to 2 hours. Punch down and divide the dough into two pieces. Roll out with a rolling pin
to desired shape.
If you would like to make bread with this dough, bake in a pre-heated oven at 350 degrees for 35 to 40 minutes. Spread corn meal on the baking sheets.
Put some corn meal on the pizza pans and place the shapened dough on top. Spread some
cooking oil over the top to keep it from drying out. Let rise 30 minutes.
Spread tomato sauce or crushed tomatoes over the dough.
Add your favorite pizza toppings, starting with the cheeses.
If you want to add pepperoni, do so after baking 5 minutes or it might burn to a crisp.
Bake at 475 degrees for 12-15 minutes.
