NUTR 317: Life Stage Nutrition II

Prerequisites: NUTR 316

Credit Hours: (3)

Examination of nutrition needs throughout the aging process, including normal nutrition and a survey of nutrition therapies for common conditions affecting the young adult through older adult. Physiological, psychological and cultural aspects characteristic of each of these phases of the lifespan will be related to nutritional requirements and eating behaviors.

 

Detailed Description of Content of Course

This course covers

  • The influence of age, growth, normal development on specific nutritional needs of humans throughout different life stages including:
    • Adulthood
    • Elderly years
  • The assessment and treatment of nutritional health risks for above life stages
  • The influence of socioeconomic, cultural, and psychological factors on nutrition behavior
  • Health promotion and disease prevention guidelines across the above life stages
  • Provision of nutrition care and food service to persons living in long term care facilities

 

Detailed Description of Conduct of Course

Course instruction strategies may include, but will not be limited to, lecture, discussion, class activities, problem based learning, case studies, videos, guest speakers, and student presentations.

 

Goals and Objectives of the Course

Upon successful completion of this course for the target populations, students will be able to describe:

  • The influence of aging on metabolism and nutritional requirements
  • The assessment and treatment of nutritional health risks in adults and the elderly
  • The influence of socioeconomic, cultural and psychological factors on nutrition behavior
  • Health promotion and disease prevention theories and guidelines for the adult and older adult populations
  • Provision of nutrition care and food service to persons living in long term care facilities

 

Assessment Measures

Assessment measures may include, but will not be limited to exams, assignments, projects, case studies, oral presentations, and class participation.
